  • 400g Chicken breast (pounded thin)
  • 200g Mushrooms (sliced)
  • 1 White onion (pureed)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 100ml Dry Sherry
  • 50g Butter

Cooking Method

  1. The Scorch Fry chicken in oil until golden and charred; remove.
  2. The Architect Sauté the onion puree and mushrooms in the same pan until dark and sweet.
  3. The Bloom Add pepper and nutmeg with a 30ml splash of sherry to release the warming perfume.
  4. The Marriage Pour in remaining sherry; simmer for 5 minutes then whisk in the butter until it forms a silk.
  5. The Final Flourish Return chicken to the pan; top with fresh raw parsley matchsticks.
