Ingredients: 4 Chicken thighs (bone-in), 100g Chouriço (sliced), 1 Large onion (diced), 2 cloves Garlic, 1 Red pepper (strips), 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 100ml White wine...

Ingredients

  • 4 Chicken thighs (bone-in)
  • 100g Chouriço (sliced)
  • 1 Large onion (diced)
  • 2 cloves Garlic
  • 1 Red pepper (strips)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 400g Tomato passata
  • 100ml White wine

Cooking Method

  1. The Scorch Fry chouriço until the fat renders; remove. Sear chicken in the red fat until charred; remove.
  2. The Architect Sauté onion and pepper in the same pan until soft.
  3. The Bloom Add garlic and spices with a 30ml splash of wine; the steam will carry the paprika scent.
  4. The Swell Add passata and remaining wine; return chicken and chouriço. Simmer covered for 20 minutes until tender.
  5. The Final Flourish Top with a massive hit of raw fresh coriander and a squeeze of lime.
