THE RED-SWELL POULTRY POT
(Our Play on Portuguese Chicken with Chouriço)
Ingredients: 4 Chicken thighs (bone-in), 100g Chouriço (sliced), 1 Large onion (diced), 2 cloves Garlic, 1 Red pepper (strips), 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 100ml White wine...

- 4 Chicken thighs (bone-in)
- 100g Chouriço (sliced)
- 1 Large onion (diced)
- 2 cloves Garlic
- 1 Red pepper (strips)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 400g Tomato passata
- 100ml White wine
Cooking Method
- The Scorch Fry chouriço until the fat renders; remove. Sear chicken in the red fat until charred; remove.
- The Architect Sauté onion and pepper in the same pan until soft.
- The Bloom Add garlic and spices with a 30ml splash of wine; the steam will carry the paprika scent.
- The Swell Add passata and remaining wine; return chicken and chouriço. Simmer covered for 20 minutes until tender.
- The Final Flourish Top with a massive hit of raw fresh coriander and a squeeze of lime.
