- 500g Chicken thighs (chunks)
- 1 Large onion (diced)
- 2 Red peppers (strips)
- 100g Jamón (diced)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 400g Tomato passata
- 100ml White wine
Cooking Method
- The Scorch Fry chicken and jamón until charred; remove.
- The Architect Sauté onions and peppers in the fat until blackened at the edges.
- The Bloom Add spices with a 30ml splash of wine; the steam will carry the paprika scent.
- The Swell Add remaining wine and passata; simmer for 15 minutes until thick.
- The Final Flourish Top with raw fresh rosemary and a drizzle of raw olive oil.
