- 500g Chicken thighs (bone-in)
- 400g Tomato passata
- 100ml Red wine
- 1 Large onion (diced)
- 1 Green pepper (petals)
- 100g Mushrooms
- 1 tsp Dried Oregano
- 1 tsp Chili flakes
Cooking Method
- The Scorch Fry chicken skin-side down until the fat renders and skin is dark brown; remove.
- The Architect Sauté the onions, peppers, and mushrooms in the chicken fat until charred.
- The Bloom Add oregano and chili with a 30ml splash of wine to release the oils.
- The Swell Add passata and remaining wine; simmer covered for 20 minutes until chicken is tender.
- The Final Flourish Top with raw fresh rosemary and a hit of fresh black pepper.
