Ingredients: 500g Chicken thighs (bone-in), 400g Tomato passata, 100ml Red wine, 1 Large onion (diced), 1 Green pepper (petals), 100g Mushrooms, 1 tsp Dried Oregano, 1 tsp Chili flakes...

  • 500g Chicken thighs (bone-in)
  • 400g Tomato passata
  • 100ml Red wine
  • 1 Large onion (diced)
  • 1 Green pepper (petals)
  • 100g Mushrooms
  • 1 tsp Dried Oregano
  • 1 tsp Chili flakes

Cooking Method

  1. The Scorch Fry chicken skin-side down until the fat renders and skin is dark brown; remove.
  2. The Architect Sauté the onions, peppers, and mushrooms in the chicken fat until charred.
  3. The Bloom Add oregano and chili with a 30ml splash of wine to release the oils.
  4. The Swell Add passata and remaining wine; simmer covered for 20 minutes until chicken is tender.
  5. The Final Flourish Top with raw fresh rosemary and a hit of fresh black pepper.
