THE RED-SWELL POULTRY CLUSTERS

- 500g Chicken thighs (chunks)
- 200g Tomato passata
- 2 tbsp Balsamic vinegar
- 1 tbsp Honey
- 1 Red onion (diced)
- 2 cloves Garlic
- 1 tsp Dried Oregano
- 1 tsp Black pepper
Cooking Method
- The Scorch Fry chicken and onions until golden and charred; remove.
- The Architect Sauté garlic in the same pan until fragrant.
- The Bloom Add spices and vinegar with a 30ml splash of stock to release the tangy oils.
- The Marriage Add passata and honey; return chicken and simmer for 10 minutes until tender.
- The Final Flourish Top with raw fresh parsley and a hit of lemon zest.
