THE RED-SWELL MARINE TUBES
(Our Play on Arroz de Lulas / Squid Rice)

Ingredients
- 400g Small squid (rings and tentacles)
- 300g Carolino rice
- 1 Large onion (pureed)
- 2 cloves Garlic
- 2 Tomatoes (diced)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 800ml Fish stock
- 50ml White wine
Cooking Method
- The Scorch High-heat stir-fry squid in oil for 90 seconds until charred and curled; remove.
- The Architect Fry onion and garlic until golden; add tomatoes and cook until they form a pulp.
- The Bloom Add rice and spices with a 30ml splash of wine; toast for 1 minute to release the smoky oils.
- The Swell Add stock; simmer uncovered until rice is tender and the liquid is a thick red silk.
- The Marriage Return squid during the last 2 minutes.
- The Final Flourish Top with a massive hit of raw fresh coriander and lemon juice.
