Ingredients: 400g Small squid (rings and tentacles), 300g Carolino rice, 1 Large onion (pureed), 2 cloves Garlic, 2 Tomatoes (diced), 1 tsp Smoked paprika, 1 tsp Black pepper, 800ml Fish stock, 50ml White wine...

Ingredients

  • 400g Small squid (rings and tentacles)
  • 300g Carolino rice
  • 1 Large onion (pureed)
  • 2 cloves Garlic
  • 2 Tomatoes (diced)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 800ml Fish stock
  • 50ml White wine

Cooking Method

  1. The Scorch High-heat stir-fry squid in oil for 90 seconds until charred and curled; remove.
  2. The Architect Fry onion and garlic until golden; add tomatoes and cook until they form a pulp.
  3. The Bloom Add rice and spices with a 30ml splash of wine; toast for 1 minute to release the smoky oils.
  4. The Swell Add stock; simmer uncovered until rice is tender and the liquid is a thick red silk.
  5. The Marriage Return squid during the last 2 minutes.
  6. The Final Flourish Top with a massive hit of raw fresh coriander and lemon juice.
