THE RED-SWELL LEAF-TUBES
(Our Play on Sarma with Allspice Twist)

- 12 Pickled Cabbage leaves
- 500g Pork and Beef mince mix
- 1 tsp Allspice
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 400g Tomato passata
- 200ml Beef stock
- 100g Smoked bacon (minced)
Cooking Method
- The Architect Fry bacon and meat until charred; remove fat.
- The Bloom Add spices to the meat with a 30ml splash of stock; the steam will release the woody perfume.
- The Build Roll the spiced meat in cabbage leaves; pack tightly into a pot.
- The Swell Pour in passata and remaining stock; simmer covered for 50 minutes until melting.
- The Final Flourish Finish with a dollop of raw sour cream and raw fresh dill.
