THE RED-SWELL GRAINS
(Our Play on Arroz de Tomate)

Ingredients
- 300g Carolino or Long-grain rice
- 1 Large onion (pureed)
- 2 cloves Garlic
- 1 Bell pepper (diced)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 400g Tomato passata
- 600ml Veg stock
- 1 tbsp Vinegar
Cooking Method
- The Architect Sauté onion, garlic, and pepper in oil until sweet and jammy.
- The Bloom Add paprika and pepper with a 30ml splash of stock; the steam will release the smoky oils.
- The Swell Add rice, passata, and remaining stock; simmer covered for 15 minutes until the rice is creamy but loose ('malandrinho').
- The Marriage Stir in vinegar at the end to lift the tomato silk.
- The Final Flourish Top with raw fresh coriander matchsticks.
