Ingredients: 300g Carolino or Long-grain rice, 1 Large onion (pureed), 2 cloves Garlic, 1 Bell pepper (diced), 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 600ml Veg stock, 1 tbsp Vinegar...

Ingredients

  • 300g Carolino or Long-grain rice
  • 1 Large onion (pureed)
  • 2 cloves Garlic
  • 1 Bell pepper (diced)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 400g Tomato passata
  • 600ml Veg stock
  • 1 tbsp Vinegar

Cooking Method

  1. The Architect Sauté onion, garlic, and pepper in oil until sweet and jammy.
  2. The Bloom Add paprika and pepper with a 30ml splash of stock; the steam will release the smoky oils.
  3. The Swell Add rice, passata, and remaining stock; simmer covered for 15 minutes until the rice is creamy but loose ('malandrinho').
  4. The Marriage Stir in vinegar at the end to lift the tomato silk.
  5. The Final Flourish Top with raw fresh coriander matchsticks.
