THE RED-SWELL GIANT PODS
(Our Play on Greek Gigantes Plaki / Butter Beans)
Ingredients: 800g Butter beans (canned/rinsed), 1 Large onion (pureed), 3 cloves Garlic, 400g Tomato passata, 1 tsp Smoked paprika, 1 tsp Cinnamon, 1 tsp Dried Mint, 100ml Extra virgin olive oil, 1 tbsp Honey...
Ingredients
- 800g Butter beans (canned/rinsed)
- 1 Large onion (pureed)
- 3 cloves Garlic
- 400g Tomato passata
- 1 tsp Smoked paprika
- 1 tsp Cinnamon
- 1 tsp Dried Mint
- 100ml Extra virgin olive oil
- 1 tbsp Honey
Cooking Method
- The Architect Fry onion puree and garlic in olive oil until sweet and golden.
- The Bloom Add spices and honey with a 30ml splash of stock; the steam will release the woody mint perfume.
- The Marriage Mix beans, passata, and onion jam in a baking dish.
- The Scorch Roast at 190°C for 40 minutes until the liquid reduces to a thick red silk and the top is charred.
- The Final Flourish Finish with a massive hit of raw fresh dill and extra raw olive oil.
