THE RED-SWELL FUNGAL STEAK
(Our Play on Beef with Sherry and Mushrooms)

- 400g Beef sirloin (thin strips)
- 200g Mushrooms (sliced)
- 100ml Dry Sherry
- 100ml Beef stock
- 50g Butter
- 1 tsp Black pepper
- 1 tsp Dried Thyme
Cooking Method
- The Scorch Sear beef on maximum heat for 2 minutes until charred; remove.
- The Architect In the same pan, fry mushrooms in 1 tbsp oil until dark and crispy.
- The Bloom Add thyme and pepper with a 30ml splash of sherry to form a dark, fragrant mist.
- The Swell Pour in remaining sherry and stock; boil for 5 minutes until it reduces to a syrup.
- The Final Flourish Whisk in the butter until the sauce is a thick silk; return the meat and garnish with fresh raw parsley.
