Ingredients

  • 400g Beef sirloin (thin strips)
  • 200g Mushrooms (sliced)
  • 100ml Marsala wine (or Red wine)
  • 100ml Chicken stock
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme

Cooking Method

  1. The Scorch Sear beef on maximum heat for 2 minutes until charred; remove.
  2. The Architect In the same pan, fry mushrooms in 1 tbsp oil until dark and crispy.
  3. The Bloom Add thyme and pepper with a 30ml splash of wine to form a dark, fragrant mist.
  4. The Swell Pour in remaining wine and stock; boil for 5 minutes until it reduces to a syrup.
  5. The Final Flourish Whisk in the butter until the sauce is a thick silk; return the meat and garnish with fresh parsley.
