Ingredients: 4 Eggs, 400g Salsa Roja, 100g Black beans (cooked), 1 tsp Cumin, 0.5 tsp Chili flakes, Feta crumbles, Fresh Avocado, Coriander...

  • 100g Black beans (cooked)
  • 1 tsp Cumin
  • 0.5 tsp Chili flakes
  • Feta crumbles
  • Fresh Avocado
  • Coriander

Cooking Method

  1. The Bloom Pour the salsa into a wide pan; add a 30ml splash of water to loosen the spice.
  2. The Swell Add the black beans and cumin; simmer for 5 minutes until bubbling.
  3. The Marriage Make 4 wells in the sauce; crack an egg into each. Cover and simmer for 5 minutes until eggs are set.
  4. The Final Flourish Finish with raw avocado, feta, and a massive hit of fresh coriander.
