THE RED-SWELL BELLS

Ingredients: 6 Bell Peppers (tops removed, cored), 500g Beef and Pork mince mix, 100g Rice (uncooked), 1 tsp Smoked paprika, 1 tsp Black pepper, 1 tsp Salt, 500ml Tomato passata, 200ml Beef stock, 1 tbsp Sugar...

Ingredients

  • 6 Bell Peppers (tops removed, cored)
  • 500g Beef and Pork mince mix
  • 100g Rice (uncooked)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 500ml Tomato passata
  • 200ml Beef stock
  • 1 tbsp Sugar

Cooking Method

  1. The Build Knead the meat, rice, and spices together; add a 10ml splash of stock to loosen the architecture.
  2. The Marriage Stuff the meat-silk into the peppers; place them upright in a deep pot.
  3. The Bloom Whisk passata, stock, and sugar with a tiny 15ml splash of vinegar; pour over the peppers.
  4. The Swell Simmer covered for 45 minutes until the rice is tender and the peppers are lacquered.
  5. The Final Flourish Serve with raw sour cream and a rain of raw fresh parsley.
