Ingredients: 300g Carolino rice, 1 Large onion (pureed), 1 Red Bell pepper (minced), 2 cloves Garlic, 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 600ml Veg stock, 1 tbsp Vinegar...

Ingredients

  • 300g Carolino rice
  • 1 Large onion (pureed)
  • 1 Red Bell pepper (minced)
  • 2 cloves Garlic
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 400g Tomato passata
  • 600ml Veg stock
  • 1 tbsp Vinegar

Cooking Method

  1. The Architect Fry onion and pepper puree in oil until sweet and jammy.
  2. The Bloom Add spices and rice with a 30ml splash of stock; toast for 1 minute to release the oils.
  3. The Swell Add remaining stock and passata; simmer covered for 15 minutes until the rice is creamy ('malandrinho').
  4. The Marriage Stir in the vinegar at the end to sharpen the red silk.
  5. The Final Flourish Finish with a massive hit of raw fresh coriander matchsticks.
