THE RED-SWELL BELL GRAINS
(Our Play on Tomato and Pepper Rice)
Ingredients: 300g Carolino rice, 1 Large onion (pureed), 1 Red Bell pepper (minced), 2 cloves Garlic, 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 600ml Veg stock, 1 tbsp Vinegar...
Ingredients
- 300g Carolino rice
- 1 Large onion (pureed)
- 1 Red Bell pepper (minced)
- 2 cloves Garlic
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 400g Tomato passata
- 600ml Veg stock
- 1 tbsp Vinegar
Cooking Method
- The Architect Fry onion and pepper puree in oil until sweet and jammy.
- The Bloom Add spices and rice with a 30ml splash of stock; toast for 1 minute to release the oils.
- The Swell Add remaining stock and passata; simmer covered for 15 minutes until the rice is creamy ('malandrinho').
- The Marriage Stir in the vinegar at the end to sharpen the red silk.
- The Final Flourish Finish with a massive hit of raw fresh coriander matchsticks.
