THE RED-SWELL BEEF
(Our Play on Thai Red Beef Curry)
Ingredients: 500g Beef sirloin (thinly sliced), 400ml Coconut milk, 2 tbsp Red curry paste, 100g Bamboo shoots, 100g Green beans, Fresh Basil leaves, 1 Red chili (sliced)...
Ingredients
- 500g Beef sirloin (thinly sliced)
- 400ml Coconut milk
- 2 tbsp Red curry paste
- 100g Bamboo shoots
- 100g Green beans
- Fresh Basil leaves
- 1 Red chili (sliced)
Cooking Method
- The Scorch Fry the red curry paste in 1 tbsp oil for 2 minutes until fragrant and the oils release.
- The Bloom Add 50ml of the coconut milk; stir until the red oil separates on top.
- The Swell Add the beef, veg, and the rest of the coconut milk; simmer for 15 minutes until the beef is tender.
- The Marriage Stir in 1 tbsp fish sauce and a pinch of sugar to balance the heat.
- The Final Flourish Tear in the basil leaves and top with fresh chili right before serving.
