THE RED-SILK SCRAMBLE

Ingredients: 200g Fresh Chorizo (crumbled), 6 Eggs (whisked), 1 small onion (minced), 1 clove Garlic, 1 tsp Smoked paprika, 0.5 tsp Chili flakes, 2 tbsp Milk, 1 tsp Butter...

Ingredients

  • 200g Fresh Chorizo (crumbled)
  • 6 Eggs (whisked)
  • 1 small onion (minced)
  • 1 clove Garlic
  • 1 tsp Smoked paprika
  • 0.5 tsp Chili flakes
  • 2 tbsp Milk
  • 1 tsp Butter

Cooking Method

  1. The Scorch Fry chorizo in its own fat until crispy; add onions and garlic and sauté until soft.
  2. The Bloom Add spices with a tiny 10ml splash of milk; the steam will help the paprika oils color the pan.
  3. The Marriage Pour in the eggs and remaining milk; scramble gently on medium heat until just set.
  4. The Final Flourish Top with fresh coriander and serve with warm corn tortillas.
