THE RED-SILK SCRAMBLE
(Our Play on Chorizo and Eggs)
Ingredients: 200g Fresh Chorizo (crumbled), 6 Eggs (whisked), 1 small onion (minced), 1 clove Garlic, 1 tsp Smoked paprika, 0.5 tsp Chili flakes, 2 tbsp Milk, 1 tsp Butter...

- 200g Fresh Chorizo (crumbled)
- 6 Eggs (whisked)
- 1 small onion (minced)
- 1 clove Garlic
- 1 tsp Smoked paprika
- 0.5 tsp Chili flakes
- 2 tbsp Milk
- 1 tsp Butter
Cooking Method
- The Scorch Fry chorizo in its own fat until crispy; add onions and garlic and sauté until soft.
- The Bloom Add spices with a tiny 10ml splash of milk; the steam will help the paprika oils color the pan.
- The Marriage Pour in the eggs and remaining milk; scramble gently on medium heat until just set.
- The Final Flourish Top with fresh coriander and serve with warm corn tortillas.
