Ingredients: 1 small onion (pureed), 2 cloves Garlic (minced), 2 tbsp Chili powder, 1 tsp Cumin, 1 tsp Garlic powder, 400g Tomato passata, 200ml Chicken stock, 1 tbsp Flour...

Ingredients

  • 1 small onion (pureed)
  • 2 cloves Garlic (minced)
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 400g Tomato passata
  • 200ml Chicken stock
  • 1 tbsp Flour

Cooking Method

  1. The Architect Fry onion puree in 2 tbsp oil until the water has evaporated and it turns sweet.
  2. The Bloom Whisk in the flour and spices with a 40ml splash of stock; fry for 2 minutes until it forms a thick red paste.
  3. The Swell Gradually whisk in the remaining stock and passata; simmer for 10 minutes until glossy.
  4. The Marriage Toss with shredded chicken or dip tortillas into the silk before rolling.
  5. The Final Flourish Top with raw fresh oregano and a dusting of chili flakes.
