THE RED-SILK ENCHILADA MIST
(Our Play on Classic Red Chile Sauce)

Ingredients

- 2 cloves Garlic (minced)
- 2 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 400g Tomato passata
- 200ml Chicken stock
- 1 tbsp Flour
Cooking Method
- The Architect Fry onion puree in 2 tbsp oil until the water has evaporated and it turns sweet.
- The Bloom Whisk in the flour and spices with a 40ml splash of stock; fry for 2 minutes until it forms a thick red paste.
- The Swell Gradually whisk in the remaining stock and passata; simmer for 10 minutes until glossy.
- The Marriage Toss with shredded chicken or dip tortillas into the silk before rolling.
- The Final Flourish Top with raw fresh oregano and a dusting of chili flakes.
