THE RED-MIST SOUP
(Our Play on Tom Yum - Shortcut)
Ingredients: 600ml Chicken or Veg stock, 2 tbsp Tom Yum paste, 2 Green chilies (slit), 200g King Prawns or Chicken strips, 100g Mushrooms (sliced), 1 Tomato (cubed)...

- 600ml Chicken or Veg stock
- 2 tbsp Tom Yum paste
- 2 Green chilies (slit)
- 200g King Prawns or Chicken strips
- 100g Mushrooms (sliced)
- 1 Tomato (cubed)
Cooking Method
- The Boil Bring stock to a boil; stir in the Tom Yum paste until dissolved.
- The Bloom Add a 20ml splash of water if the paste is too thick to release the lemongrass aromatics.
- The Swell Add protein and veg; simmer for 5 minutes until cooked through.
- The Final Flourish Stir in 1 tbsp fish sauce and a squeeze of lime right before serving.
