Ingredients: 250g Red lentils (rinsed), 1 Red onion (diced), 2 Tomatoes (pureed), 1 tsp Cumin, 1 tsp Smoked paprika, 1 tsp Garlic powder, 1L Veg stock, 1 tbsp Lime juice...

Ingredients

  • 250g Red lentils (rinsed)
  • 1 Red onion (diced)
  • 2 Tomatoes (pureed)
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1L Veg stock
  • 1 tbsp Lime juice

Cooking Method

  1. The Architect Sauté onion in oil until soft; add the tomato puree and cook until the color deepens.
  2. The Bloom Add spices with a 30ml splash of stock; the steam will release the smoky aromatics.
  3. The Swell Add lentils and remaining stock; simmer for 15 minutes until the lentils dissolve into a thick silk.
  4. The Marriage Stir in the lime juice at the very end to sharpen the earthy pulse.
  5. The Final Flourish Top with raw fresh coriander and a dollop of Greek yogurt.
