THE RED-MIST PULSE
(Our Play on Mexican Red Lentil Soup)

Ingredients
- 250g Red lentils (rinsed)
- 1 Red onion (diced)
- 2 Tomatoes (pureed)
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1L Veg stock
- 1 tbsp Lime juice
Cooking Method
- The Architect Sauté onion in oil until soft; add the tomato puree and cook until the color deepens.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the smoky aromatics.
- The Swell Add lentils and remaining stock; simmer for 15 minutes until the lentils dissolve into a thick silk.
- The Marriage Stir in the lime juice at the very end to sharpen the earthy pulse.
- The Final Flourish Top with raw fresh coriander and a dollop of Greek yogurt.
