- 400g White fish (blitzed to a paste)
- 2 tbsp Red curry paste
- 1 Egg
- 1 tbsp Fish sauce
- 50g Green beans (finely sliced)
- 5 Lime leaves (shredded)
Cooking Method
- The Manual Knead Mix fish paste, curry paste, and egg for 5 minutes until very springy and bouncy.
- The Bloom Add a tiny 10ml splash of water to the mix to keep the fish moist while it absorbs the spice.
- The Shape Stir in beans and lime leaves; form into small disks.
- The Scorch Shallow fry in batches for 3 minutes per side until dark red and puffed.
- The Finish Serve with fresh cucumber and sweet chili sauce.
