(Our Play on Spicy Spanish Pork with Sage)
Ingredients: 400g Pork loin (sliced into 1cm slabs), 2 tsp Smoked paprika, 1 tsp Chili flakes, 6 fresh Sage leaves, 50g Butter, 1 tsp Black pepper, 1 tsp Salt...
Ingredients
- 400g Pork loin (sliced into 1cm slabs)
- 2 tsp Smoked paprika
- 1 tsp Chili flakes
- 6 fresh Sage leaves
- 50g Butter
- 1 tsp Black pepper
- 1 tsp Salt
Cooking Method
- The Scorch Fry pork slabs in butter on high heat for 3 minutes per side until charred and golden.
- The Architect Add sage leaves to the hot butter until they are dark and crispy.
- The Bloom Add paprika, chili, and pepper with a 20ml splash of water to form a smoky steam.
- The Marriage Simmer for 2 minutes until the liquid reduces to a thick, dark red lacquer on the meat.
- The Final Flourish Garnish with a squeeze of lime and raw fresh sage.
