Ingredients: 400g Pork loin (sliced into 1cm slabs), 2 tsp Chili flakes, 1 tsp Smoked paprika, 6 fresh Sage leaves, 50g Butter, 1 tsp Black pepper, 1 tsp Salt...

Ingredients

  • 400g Pork loin (sliced into 1cm slabs)
  • 2 tsp Chili flakes
  • 1 tsp Smoked paprika
  • 6 fresh Sage leaves
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Salt

Cooking Method

  1. The Scorch Fry pork slabs in butter on high heat for 3 minutes per side until charred and golden.
  2. The Architect Add sage leaves to the hot butter until they are dark and crispy.
  3. The Bloom Add chili, paprika, and pepper with a 20ml splash of stock to form a fiery steam.
  4. The Marriage Simmer for 2 minutes until the liquid reduces to a thick, dark red lacquer on the meat.
  5. The Final Flourish Garnish with a squeeze of lime and raw fresh sage.
