- 200g Fresh Chorizo (crumbled)
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 tsp Garlic powder
- 200g Tomato passata
- 50ml Double cream
- 200g Penne or Fusilli
Cooking Method
- The Scorch Fry chorizo until the fat renders and meat is rock-hard crispy; add minced onion.
- The Bloom Add spices with a 30ml splash of pasta water to release the red oils.
- The Marriage Add passata and cream; simmer for 5 minutes until it forms a thick pink-red silk.
- The Silk Merge Toss the cooked pasta through the sauce until every curve is coated.
- The Final Flourish Top with raw fresh jalapeño rings and a hit of raw parmesan.
