THE RED-FIRE ORBS

Ingredients: 500g Beef or Pork mince, 1 small onion (pureed), 2 cloves Garlic, 1 tsp Dried Oregano, 1 tsp Chili flakes, 400g Tomato passata, 1 tbsp Tomato purée...

Ingredients

  • 500g Beef or Pork mince
  • 1 small onion (pureed)
  • 2 cloves Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Chili flakes
  • 400g Tomato passata
  • 1 tbsp Tomato purée

Cooking Method

  1. The Build Knead meat, onion puree, and half the spices until tacky; shape into small spheres.
  2. The Scorch Sear the spheres in a hot pan until charred and firm; remove.
  3. The Bloom In the same pan, fry tomato purée and remaining spices with a 30ml splash of water.
  4. The Swell Add passata; return meatballs and simmer for 15 minutes until the sauce is a thick lacquer.
  5. The Final Flourish Top with a massive hit of raw parmesan and fresh basil.
