THE RED-FIRE LEGUMES
(Our Play on Spicy Chickpeas / Cecina)
Ingredients: 400g Chickpeas (boiled/canned), 2 tsp Chili flakes, 1 tsp Smoked paprika, 1 Red onion (finely diced), 3 cloves Garlic, 2 tbsp Olive oil, 1 tbsp Tomato purée...
Ingredients
- 400g Chickpeas (boiled/canned)
- 2 tsp Chili flakes
- 1 tsp Smoked paprika
- 1 Red onion (finely diced)
- 3 cloves Garlic
- 2 tbsp Olive oil
- 1 tbsp Tomato purée
Cooking Method
- The Architect Sauté onions and garlic in olive oil until soft and translucent.
- The Bloom Add tomato purée and spices with a 25ml splash of water to form a dark fire-paste.
- The Marriage Add the chickpeas; toss on high heat for 5 minutes until every legume is stained red and slightly charred.
- The Final Flourish Finish with a squeeze of fresh lemon and raw fresh oregano.
