THE RED-FIRE FUNGAL BOWL

Ingredients: 400g Mixed mushrooms (sliced), 1 tsp Smoked paprika, 1 tsp Garlic powder, 0.5 tsp Chili flakes, 1 Red onion (petals), 2 tbsp Oil, 1 tbsp Balsamic vinegar, 1 tsp Honey...

Ingredients

  • 400g Mixed mushrooms (sliced)
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 0.5 tsp Chili flakes
  • 1 Red onion (petals)
  • 2 tbsp Oil
  • 1 tbsp Balsamic vinegar
  • 1 tsp Honey

Cooking Method

  1. The Scorch Fry mushrooms and onions in a dry pan on high heat until they release their water and the edges char.
  2. The Bloom Add spices and a tiny 20ml splash of water; this creates a smoky steam that coats the fungi.
  3. The Marriage Add vinegar and honey; toss for 2 minutes until the mushrooms are dark and glistening.
  4. The Final Flourish Serve in charred tortillas with raw fresh salsa and lime.
