THE RED-FIRE FUNGAL BOWL
(Our Play on Spicy Mushroom Sauté)

Ingredients
- 400g Mixed mushrooms (sliced)
- 2 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 Large red onion (finely diced)
- 3 cloves Garlic
- 200g Tomato passata
- 1 tbsp Sherry vinegar
Cooking Method
- The Scorch Fry mushrooms in a dry pan on max heat until they are charred and dark; remove.
- The Architect Sauté onions and garlic in 2 tbsp oil until they are a sweet, golden jam.
- The Bloom Add paprika and chili with a 25ml splash of water to form a glowing fire-paste.
- The Marriage Add passata, vinegar, and mushrooms; simmer for 5 minutes until thick.
- The Final Flourish Top with raw fresh parsley and a hit of extra virgin olive oil.
