THE RED-FIRE FUNGAL BOWL

Ingredients: 400g Mixed mushrooms (sliced), 2 tsp Chili flakes, 1 tsp Smoked paprika, 1 Large red onion (finely diced), 3 cloves Garlic, 200g Tomato passata, 1 tbsp Balsamic vinegar...

Ingredients

  • 400g Mixed mushrooms (sliced)
  • 2 tsp Chili flakes
  • 1 tsp Smoked paprika
  • 1 Large red onion (finely diced)
  • 3 cloves Garlic
  • 200g Tomato passata
  • 1 tbsp Balsamic vinegar

Cooking Method

  1. The Scorch Fry mushrooms in a dry pan on max heat until they are charred and dark; remove.
  2. The Architect Sauté onions and garlic in 2 tbsp oil until they are a sweet, golden jam.
  3. The Bloom Add chili and paprika with a 25ml splash of water to form a glowing fire-paste.
  4. The Marriage Add passata, vinegar, and mushrooms; simmer for 5 minutes then toss with your favorite pasta.
  5. The Final Flourish Top with raw fresh parsley and a hit of pecorino cheese.
