THE RED-FIRE EGGPLANT
(Our Play on Pasta alla Norma - Spice Edit)
Ingredients: 2 Large Eggplants (cubed), 1 Large onion (finely diced), 1 tbsp Tomato purée, 2 tsp Chili flakes, 1 tsp Smoked paprika, 200g Tomato passata, 100g Ricotta Salata (or Feta)...

- 2 Large Eggplants (cubed)
- 1 Large onion (finely diced)
- 1 tbsp Tomato purée
- 2 tsp Chili flakes
- 1 tsp Smoked paprika
- 200g Tomato passata
- 100g Ricotta Salata (or Feta)
Cooking Method
- The Scorch Fry eggplant cubes in 4 tbsp oil until the skins are blackened and the flesh is soft; remove.
- The Architect Sauté onions until deep golden brown; stir in tomato purée.
- The Bloom Add chili and paprika with a 30ml splash of water to form a dark fire-paste.
- The Marriage Add passata and eggplant; simmer for 5 minutes then toss with pasta.
- The Final Flourish Top with crumbled cheese and fresh mint leaves.
