THE RED-COCONUT WHIP

- 400ml Coconut milk
- 400ml Chicken stock
- 3 tbsp Red curry paste
- 1 tsp Turmeric
- 200g Prawns or Chicken strips
- 200g Rice vermicelli (boiled)
Cooking Method
- The Scorch Fry the curry paste in oil for 2 minutes until fragrant.
- The Bloom Add 50ml of coconut milk; stir until the red oil rises to the top.
- The Swell Add stock and the rest of the coconut milk; simmer for 10 minutes.
- The Marriage Add protein; cook for 3 minutes until tender. Pour the hot soup over the noodles.
- The Final Flourish Top with fresh coriander and a squeeze of lime.
