- 1kg Chicken wings
- 2 tbsp Ancho chili powder
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 100ml Salsa Roja
- 2 tbsp Honey
- 1 Lime (juiced)
Cooking Method
- The Scorch Roast wings at 220°C for 15 minutes until rock-hard and charred.
- The Bloom Whisk salsa, honey, and lime juice with a 30ml splash of water; boil for 2 minutes to form a thick red lava.
- The Marriage Toss the wings in the fire-silk until every surface is sticky and red.
- The Final Flourish Top with raw fresh jalapeño rings and a final dusting of sea salt.
