THE RED-BOLT VEG
(Our Play on Spanish Spicy Zucchini)
Ingredients: 400g Zucchini (cut into batons), 2 tsp Smoked paprika, 1 tsp Dried Oregano, 2 cloves Garlic (sliced), 3 tbsp Olive oil, 1 tbsp Sherry vinegar, 1 tsp Sugar...
Ingredients
- 400g Zucchini (cut into batons)
- 2 tsp Smoked paprika
- 1 tsp Dried Oregano
- 2 cloves Garlic (sliced)
- 3 tbsp Olive oil
- 1 tbsp Sherry vinegar
- 1 tsp Sugar
Cooking Method
- The Scorch Fry zucchini batons in oil on high heat until they have charred brown spots.
- The Architect Push to the side; sauté garlic until golden and crisp.
- The Bloom Add the paprika and oregano with a tiny 15ml splash of water to form a spicy, smoky steam.
- The Marriage Toss everything with the vinegar and sugar until the liquid evaporates and the spice grips the veg.
- The Final Flourish Serve hot or cold with a hit of raw fresh mint.
