THE RED-BOLT VEG LAYERS
(Our Play on Balkan Turli Perime)
Ingredients: 1 Eggplant, 2 Zucchini, 2 Potatoes, 2 Peppers (all cubed), 1 Large onion (pureed), 2 cloves Garlic, 400g Tomato passata, 1 tsp Smoked paprika, 1 tsp Dried Oregano, 1 tsp Cumin...
Ingredients
- 1 Eggplant
- 2 Zucchini
- 2 Potatoes
- 2 Peppers (all cubed)
- 1 Large onion (pureed)
- 2 cloves Garlic
- 400g Tomato passata
- 1 tsp Smoked paprika
- 1 tsp Dried Oregano
- 1 tsp Cumin
- 100ml Olive oil
- 1 tbsp Wine vinegar
Cooking Method
- The Scorch Fry eggplant and peppers in oil until charred; remove.
- The Architect Fry onion puree in the same pan until sweet and golden.
- The Bloom Add spices and garlic with a 30ml splash of stock; the steam will release the smoky perfume.
- The Swell Add passata, vinegar, and all veg; simmer for 25 minutes until the veg melts into a thick red silk.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra raw olive oil.
