Ingredients: 1 small Pumpkin (cubed), 1 tbsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Dried Sage, 100g Feta (crumbled), 3 tbsp Olive oil, 1 tbsp Honey...

Ingredients

  • 1 small Pumpkin (cubed)
  • 1 tbsp Smoked paprika
  • 1 tsp Chili flakes
  • 1 tsp Dried Sage
  • 100g Feta (crumbled)
  • 3 tbsp Olive oil
  • 1 tbsp Honey

Cooking Method

  1. The Mix Toss pumpkin with oil and dry spices in a tray.
  2. The Bloom Add a tiny 15ml splash of water to the tray; the moisture helps the paprika oils stain the pumpkin architecture.
  3. The Scorch Roast at 210°C for 25 minutes until the edges are rock-hard charred and blackened.
  4. The Marriage Drizzle with honey while hot; the cheese should remain raw on top.
  5. The Final Flourish Finish with extra raw sage and a final rain of extra virgin olive oil.
