THE RED-BOLT SQUASH-SWELL
(Our Play on Macedonian Spiced Pumpkin)
Ingredients: 1 small Pumpkin (cubed), 1 tbsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Dried Sage, 100g Feta (crumbled), 3 tbsp Olive oil, 1 tbsp Honey...
Ingredients
- 1 small Pumpkin (cubed)
- 1 tbsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Dried Sage
- 100g Feta (crumbled)
- 3 tbsp Olive oil
- 1 tbsp Honey
Cooking Method
- The Mix Toss pumpkin with oil and dry spices in a tray.
- The Bloom Add a tiny 15ml splash of water to the tray; the moisture helps the paprika oils stain the pumpkin architecture.
- The Scorch Roast at 210°C for 25 minutes until the edges are rock-hard charred and blackened.
- The Marriage Drizzle with honey while hot; the cheese should remain raw on top.
- The Final Flourish Finish with extra raw sage and a final rain of extra virgin olive oil.
