Ingredients: 400g Kidney beans (canned/rinsed), 1 tbsp Chili powder, 1 tsp Cumin, 1 tsp Smoked paprika, 1 small onion (minced), 100ml Veg stock, 1 tbsp Tomato purée, 1 tsp Honey...

Ingredients

  • 400g Kidney beans (canned/rinsed)
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1 small onion (minced)
  • 100ml Veg stock
  • 1 tbsp Tomato purée
  • 1 tsp Honey

Cooking Method

  1. The Architect Sauté onion in 1 tbsp oil until sweet and translucent.
  2. The Bloom Add tomato purée and spices with a 30ml splash of stock; fry until the oil turns a deep glowing red.
  3. The Marriage Add beans and remaining stock; simmer on high heat for 5 minutes while lightly crushing some beans to thicken the silk.
  4. The Final Flourish Serve in charred tortillas with raw pickled onions and lime.
