(Our Play on Spicy Bean Tacos)
Ingredients: 400g Kidney beans (canned/rinsed), 1 tbsp Chili powder, 1 tsp Cumin, 1 tsp Smoked paprika, 1 small onion (minced), 100ml Veg stock, 1 tbsp Tomato purée, 1 tsp Honey...
Ingredients
- 400g Kidney beans (canned/rinsed)
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 small onion (minced)
- 100ml Veg stock
- 1 tbsp Tomato purée
- 1 tsp Honey
Cooking Method
- The Architect Sauté onion in 1 tbsp oil until sweet and translucent.
- The Bloom Add tomato purée and spices with a 30ml splash of stock; fry until the oil turns a deep glowing red.
- The Marriage Add beans and remaining stock; simmer on high heat for 5 minutes while lightly crushing some beans to thicken the silk.
- The Final Flourish Serve in charred tortillas with raw pickled onions and lime.
