(Our Play on Macedonian Mashed Beans)

Ingredients
- 400g White beans (canned/rinsed)
- 1 tbsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Garlic powder
- 100ml Extra virgin olive oil
- 1 tbsp Vinegar
- 50ml Bean water
Cooking Method
- The Bloom Whisk half the oil and spices with a tiny 10ml splash of warm water to bloom the paprika oils.
- The Silk Merge Blitz the beans, spiced oil, vinegar, and bean water until it forms a smooth, heavy white-orange silk.
- The Architect Heat remaining oil in a pan until smoking; add extra paprika for 10 seconds until it turns deep red.
- The Final Flourish Pour the red fire-oil over the bean cloud; top with raw fresh chives.
