THE RED-BOLT MARINE TUBES

- 100g Chouriço (minced)
- 1 small onion (pureed)
- 2 cloves Garlic
- 50g Breadcrumbs
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 200g Tomato passata
- 100ml White wine
Cooking Method
- The Build Fry chouriço and onion; mix with breadcrumbs and spices to form a tacky filling.
- The Scorch Stuff squid tubes; fry in a hot pan for 2 minutes until charred and curled.
- The Bloom Add spices and a 30ml splash of wine to the pan; the hiss will release the smoky oils.
- The Swell Add passata; simmer for 10 minutes until the tubes are lacquered in red silk.
- The Final Flourish Top with a massive hit of raw fresh coriander.
