Ingredients: 2 Swordfish steaks, Romesco Sauce, 1 tsp Smoked paprika, 1 tsp Salt, 2 tbsp Olive oil, 1 Lemon (juiced)...

Ingredients

  • 2 Swordfish steaks
  • Romesco Sauce
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 2 tbsp Olive oil
  • 1 Lemon (juiced)

Cooking Method

  1. The Scorch Sear swordfish on maximum heat for 3 minutes per side until charred and firm.
  2. The Bloom Add a tiny 10ml splash of water to the pan at the end to release the meat juices.
  3. The Marriage Spread a thick layer of Romesco silk over the hot fish.
  4. The Final Flourish Top with fresh raw parsley matchsticks and a squeeze of lime.
