- 2 Swordfish steaks
- Romesco Sauce
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 tbsp Olive oil
- 1 Lemon (juiced)
Cooking Method
- The Scorch Sear swordfish on maximum heat for 3 minutes per side until charred and firm.
- The Bloom Add a tiny 10ml splash of water to the pan at the end to release the meat juices.
- The Marriage Spread a thick layer of Romesco silk over the hot fish.
- The Final Flourish Top with fresh raw parsley matchsticks and a squeeze of lime.
