Ingredients: 500g Pork loin (1cm slices), 2 tbsp Ancho chili powder, 1 tsp Cumin, 1 tsp Dried Oregano, 2 Red onions (pureed), 2 cloves Garlic, 100ml Apple cider vinegar, 1 tbsp Honey, 100ml Chicken stock...

Ingredients

  • 500g Pork loin (1cm slices)
  • 2 tbsp Ancho chili powder
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 2 Red onions (pureed)
  • 2 cloves Garlic
  • 100ml Apple cider vinegar
  • 1 tbsp Honey
  • 100ml Chicken stock

Cooking Method

  1. The Architect Fry onion puree in oil for 10 minutes until sweet and dark brown.
  2. The Bloom Add garlic and spices with a 40ml splash of stock; fry until the oil turns deep red.
  3. The Scorch Add pork slices; sear on maximum heat for 3 minutes per side until charred.
  4. The Marriage Add vinegar, honey, and remaining stock; simmer for 8 minutes until the sauce is a thick lacquer.
  5. The Final Flourish Finish with a massive hit of raw fresh coriander.
