THE RAKIJA-LACQUER RIBS
(Our Play on Balkan Glazed Pork Ribs)
Ingredients: 1kg Pork ribs, 1 tbsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Salt, 100ml Rakija or Brandy, 2 tbsp Honey, 1 tbsp Wine vinegar, 1 Onion (quartered)...

- 1kg Pork ribs
- 1 tbsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 100ml Rakija or Brandy
- 2 tbsp Honey
- 1 tbsp Wine vinegar
- 1 Onion (quartered)
Cooking Method
- The Scorch Roast ribs at 200°C for 25 minutes until browned.
- The Bloom Whisk Rakija, honey, vinegar, and spices with a 20ml splash of water; boil for 2 minutes to form a thick fire-paste.
- The Marriage Paint the ribs heavily with the Rakija-silk; return to oven at 220°C.
- The Scorch Merge Baste every 5 minutes until the meat is blackened and sticky.
- The Final Flourish Top with raw fresh parsley matchsticks and extra salt.
