THE RAKIJA-LACQUER RIBS

Ingredients: 1kg Pork ribs, 1 tbsp Smoked paprika, 1 tsp Garlic powder, 1 tsp Salt, 100ml Rakija or Brandy, 2 tbsp Honey, 1 tbsp Wine vinegar, 1 Onion (quartered)...

Ingredients

  • 1kg Pork ribs
  • 1 tbsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 100ml Rakija or Brandy
  • 2 tbsp Honey
  • 1 tbsp Wine vinegar
  • 1 Onion (quartered)

Cooking Method

  1. The Scorch Roast ribs at 200°C for 25 minutes until browned.
  2. The Bloom Whisk Rakija, honey, vinegar, and spices with a 20ml splash of water; boil for 2 minutes to form a thick fire-paste.
  3. The Marriage Paint the ribs heavily with the Rakija-silk; return to oven at 220°C.
  4. The Scorch Merge Baste every 5 minutes until the meat is blackened and sticky.
  5. The Final Flourish Top with raw fresh parsley matchsticks and extra salt.
