Ingredients: 200g Potato (matchsticks), 100g Spinach, 1 Onion (sliced), 150g Gram flour, 1 tsp Rice flour, 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Cumin seeds, 500ml Vegetable oil...

Ingredients

  • 200g Potato (matchsticks)
  • 100g Spinach
  • 1 Onion (sliced)
  • 150g Gram flour
  • 1 tsp Rice flour
  • 1 tsp Turmeric
  • 1 tsp Chili powder
  • 1 tsp Cumin seeds
  • 500ml Vegetable oil

Cooking Method

  1. The Mix Combine the veg and spices in a bowl; sprinkle with salt and let sit for 5 minutes.
  2. The Coat Add the gram flour and rice flour; toss with your hands until every piece is coated.
  3. The Slurry Add a splash of water gradually until a sticky paste forms that clings to the veg.
  4. The Fry Drop small 'nests' into oil heated to 180°C and fry until dark golden.
  5. The Finish Serve immediately with a pinch of Chaat Masala.
