- 200g Potato (matchsticks)
- 100g Spinach
- 1 Onion (sliced)
- 150g Gram flour
- 1 tsp Rice flour
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Cumin seeds
- 500ml Vegetable oil
Cooking Method
- The Mix Combine the veg and spices in a bowl; sprinkle with salt and let sit for 5 minutes.
- The Coat Add the gram flour and rice flour; toss with your hands until every piece is coated.
- The Slurry Add a splash of water gradually until a sticky paste forms that clings to the veg.
- The Fry Drop small 'nests' into oil heated to 180°C and fry until dark golden.
- The Finish Serve immediately with a pinch of Chaat Masala.
