Ingredients: 600g Pumpkin (cubed), 400g White beans (canned), 1 Onion (pureed), 2 cloves Garlic, 50g Butter, 1 tsp Ground Ginger, 1 tsp Smoked paprika, 1 tsp Salt, 1L Veg stock...

Ingredients

  • 600g Pumpkin (cubed)
  • 400g White beans (canned)
  • 1 Onion (pureed)
  • 2 cloves Garlic
  • 50g Butter
  • 1 tsp Ground Ginger
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 1L Veg stock

Cooking Method

  1. The Architect Fry onion puree and garlic in butter until sweet.
  2. The Bloom Add spices with a 30ml splash of stock; the steam will release the warming ginger perfume.
  3. The Swell Add pumpkin and stock; simmer for 15 minutes. Blitz into a thick orange mist.
  4. The Marriage Stir in the beans; simmer for 3 minutes until heated through.
  5. The Final Flourish Top with a heavy drizzle of raw pumpkin seed oil and fresh mint.
