THE PUMPKIN-PULSE MIST
(Our Play on Portuguese Pumpkin and Bean Soup)
Ingredients: 600g Pumpkin (cubed), 400g White beans (canned), 1 Onion (pureed), 2 cloves Garlic, 50g Butter, 1 tsp Ground Ginger, 1 tsp Smoked paprika, 1 tsp Salt, 1L Veg stock...

- 600g Pumpkin (cubed)
- 400g White beans (canned)
- 1 Onion (pureed)
- 2 cloves Garlic
- 50g Butter
- 1 tsp Ground Ginger
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1L Veg stock
Cooking Method
- The Architect Fry onion puree and garlic in butter until sweet.
- The Bloom Add spices with a 30ml splash of stock; the steam will release the warming ginger perfume.
- The Swell Add pumpkin and stock; simmer for 15 minutes. Blitz into a thick orange mist.
- The Marriage Stir in the beans; simmer for 3 minutes until heated through.
- The Final Flourish Top with a heavy drizzle of raw pumpkin seed oil and fresh mint.
