(Our Play on Mussels with Tomato and Herbs)

Ingredients
- 1kg Fresh Mussels
- 2 cloves Garlic (sliced)
- 200g Cherry tomatoes (halved)
- 1 tsp Herbes de Provence
- 1 tsp Black pepper
- 100ml Dry White Wine
- 3 tbsp Olive oil
Cooking Method
- The Architect Heat oil and sauté garlic until it starts to turn golden brown.
- The Bloom Add herbs and tomatoes with a 30ml splash of wine; the steam will help the tomatoes burst.
- The Swell Add remaining wine; bring to a rolling boil.
- The Marriage Add mussels; cover tightly and cook for 5 minutes until shells open.
- The Final Flourish Finish with a massive hit of raw fresh basil matchsticks.
