- 300g Cauliflower (small florets)
- 200g Potatoes (cubed)
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Chili powder
- 1 large onion (diced)
- 1 tbsp Ginger-garlic paste
Cooking Method
- The Scorch Fry cauliflower and potatoes on high heat until the edges are golden and charred.
- The Architect In a separate pan, sauté onions until soft and golden.
- The Bloom Add spices and a splash of water to form a thick, clinging masala.
- The Marriage Toss charred veg into the masala; cook for 10 minutes until tender.
- The Finish Top with a hit of fresh ginger matchsticks and coriander.
