Ingredients

  • 300g Cauliflower (small florets)
  • 200g Potatoes (cubed)
  • 1 tsp Turmeric
  • 1 tsp Cumin powder
  • 1 tsp Chili powder
  • 1 large onion (diced)
  • 1 tbsp Ginger-garlic paste

Cooking Method

  1. The Scorch Fry cauliflower and potatoes on high heat until the edges are golden and charred.
  2. The Architect In a separate pan, sauté onions until soft and golden.
  3. The Bloom Add spices and a splash of water to form a thick, clinging masala.
  4. The Marriage Toss charred veg into the masala; cook for 10 minutes until tender.
  5. The Finish Top with a hit of fresh ginger matchsticks and coriander.
