THE POMEGRANATE MEAT SLABS
(Our Play on Balkan Grilled Steak with Mint)
Ingredients: 2 Ribeye steaks, 1 tsp Sumac, 1 tsp Black pepper, 1 tsp Salt, 2 tbsp Pomegranate molasses, 2 tbsp Olive oil, 1 tbsp Honey, Handful of fresh Mint (minced)...
Ingredients
- 2 Ribeye steaks
- 1 tsp Sumac
- 1 tsp Black pepper
- 1 tsp Salt
- 2 tbsp Pomegranate molasses
- 2 tbsp Olive oil
- 1 tbsp Honey
- Handful of fresh Mint (minced)
Cooking Method
- The Coat Rub steaks with oil and dry spices; let sit for 30 minutes.
- The Scorch Grill on white-hot heat for 4 minutes per side until rock-hard charred; remove.
- The Bloom Whisk pomegranate molasses and honey with a tiny 10ml splash of water; the heat will release the sweet oils.
- The Marriage Baste the hot meat with the pomegranate-silk immediately.
- The Final Flourish Top with a mountain of raw fresh mint and pomegranate arils.
