THE POMEGRANATE LAMB-LACQUER
(Our Play on Balkan-Turkish Lamb Chops)

- 4 Lamb chops
- 1 tbsp Sumac
- 1 tsp Cumin
- 1 tsp Black pepper
- 2 tbsp Pomegranate molasses
- 2 tbsp Olive oil
- 1 tbsp Honey
Cooking Method
- The Coat Rub chops with dry spices and oil; add a tiny 10ml splash of water to help the sumac stick.
- The Scorch Grill on white-hot heat for 3 minutes per side until blackened and charred.
- The Marriage Whisk pomegranate molasses and honey; brush over the hot meat for the last 30 seconds.
- The Final Flourish Top with raw pomegranate arils and fresh raw mint.
