THE POMEGRANATE KEBAB
(Our Play on Chapli Kebab)
Ingredients: 500g Beef mince (high fat), 1 Red onion (finely diced), 1 Tomato (seeds removed, diced), 1 tsp Turmeric, 1 tsp Anardana (Dried pomegranate powder), 1 tsp Coarse black pepper, 2 tbsp Cornflour, 1 Egg...
Ingredients
- 500g Beef mince (high fat)
- 1 Red onion (finely diced)
- 1 Tomato (seeds removed, diced)
- 1 tsp Turmeric
- 1 tsp Anardana (Dried pomegranate powder)
- 1 tsp Coarse black pepper
- 2 tbsp Cornflour
- 1 Egg
Cooking Method
- The Manual Knead Knead meat, veg, and spices for 5 minutes until the texture is tacky.
- The Bloom Add a tiny splash of water to the spices before mixing to turn them into a paste.
- The Shape Flatten into large, thin disks; press a slice of tomato into the center.
- The Scorch Shallow fry in hot oil for 4 minutes per side until the edges are blackened and charred.
- The Final Flourish Dust with more pomegranate powder and serve with lemon.
