THE POMEGRANATE HUNT
(Our Play on Balkan Lamb Shank Braise)
Ingredients: 2 Lamb shanks, 2 Red onions (pureed), 4 cloves Garlic, 2 Carrots (minced), 1 tbsp Sumac, 1 tsp Cumin, 1 tsp Black pepper, 200ml Pomegranate molasses, 300ml Beef stock, 1 tbsp Honey...
Ingredients
- 2 Lamb shanks
- 2 Red onions (pureed)
- 4 cloves Garlic
- 2 Carrots (minced)
- 1 tbsp Sumac
- 1 tsp Cumin
- 1 tsp Black pepper
- 200ml Pomegranate molasses
- 300ml Beef stock
- 1 tbsp Honey
Cooking Method
- The Scorch Sear shanks on maximum heat until dark brown and charred; remove.
- The Architect Fry onion and carrot puree until sweet and dark.
- The Bloom Add spices and garlic with a 40ml splash of stock; the steam will release the tart sumac oils.
- The Swell Add molasses, honey, and remaining stock; return lamb. Simmer covered for 100 minutes until melting.
- The Final Flourish Top with raw fresh mint matchsticks and pomegranate arils.
