THE POMEGRANATE-CHARRED PODS
(Our Play on Stuffed Peppers with a Persian Heart)
Ingredients: 6 Bell Peppers, 500g Lamb mince, 100g Rice (uncooked), 1 tbsp Sumac, 1 tsp Cumin, 1 tsp Salt, 50ml Pomegranate molasses, 200ml Beef stock, 1 tbsp Honey...

- 6 Bell Peppers
- 500g Lamb mince
- 100g Rice (uncooked)
- 1 tbsp Sumac
- 1 tsp Cumin
- 1 tsp Salt
- 50ml Pomegranate molasses
- 200ml Beef stock
- 1 tbsp Honey
Cooking Method
- The Build Mix meat, rice, and dry spices; add a 10ml splash of stock to help the sumac bloom.
- The Marriage Stuff peppers; place in a pot with molasses, remaining stock, and honey.
- The Swell Simmer covered for 40 minutes until rice is tender and peppers are lacquered.
- The Final Flourish Finish with raw pomegranate arils and massive fresh raw coriander.
