THE PIZZA-LACQUER FIN

Ingredients: 2 Swordfish steaks, 2 tsp Dried Oregano, 1 tsp Chili flakes, 200g Tomato passata, 2 cloves Garlic (sliced), 50g Green olives, 1 tbsp Capers...

Ingredients

  • 2 Swordfish steaks
  • 2 tsp Dried Oregano
  • 1 tsp Chili flakes
  • 200g Tomato passata
  • 2 cloves Garlic (sliced)
  • 50g Green olives
  • 1 tbsp Capers

Cooking Method

  1. The Scorch Sear swordfish on maximum heat for 2 minutes per side until charred; remove.
  2. The Architect In the same pan, sauté garlic, olives, and capers in oil until fragrant.
  3. The Bloom Add oregano and chili with a 30ml splash of water to release the herbal perfume.
  4. The Swell Add passata; simmer for 5 minutes then return the fish to the pan.
  5. The Final Flourish Finish with raw extra virgin olive oil and a hit of fresh lemon.
